MIMIS CAFE SPRINGS FOR MENU ITEMS INSPIRED BY FARMERS MARKET
TUSTIN, Calif. – Nationally acclaimed Executive Chef of Mimis Cafe, Adam Baird, has been waiting with anticipation for the springtime crops to be harvested in order to create new dishes enhanced by the delicate yet complex flavors of the season. Now the crops are ready and the collection of upscale dining restaurants are receiving bountiful shipments of fresh asparagus, sweet strawberries and vine ripened tomatoes. More than 115 Mimis Cafe locations nationwide are debuting 10 items inspired by farmers market produce. These specials can be found on the “Seasonal Features” section of the menu and will be available from May 3 through July 11. “My favorite seasonal vegetable is asparagus because it has the ability to transform a classic dish into a springtime delicacy," said Baird. “Asparagus pairs nicely with pasta in a light sauce and tastes delicious with marinated, grilled shrimp atop baby greens and fresh strawberries. This versatile vegetable also works well in simple egg dishes like our Fresh Asparagus Omelette.” Following are descriptions of Mimis spring menu additions, which range from $7.99 to $14.99: Breakfast (both served with fresh squeezed juice)1. Fresh Asparagus & Potato Cake Benedict: Crispy potato cakes topped with poached eggs, broiled fresh asparagus and hollandaise sauce. Served with fresh strawberries and melon.2. Fresh Asparagus Omelette: A fluffy three egg omelette with diced fresh asparagus, tomatoes and onions. Topped with jack cheese, broiled asparagus spears and tomato cream. Served with red skin potatoes and a freshly baked muffin 3. Seasonal Muffin: Coffee Cake Lunch/Dinner4. Citrus Broiled Shrimp & Asparagus (Small Bite): Grilled shrimp and fresh asparagus drizzled with creamy basil pesto atop baby greens and fresh strawberries tossed in balsamic vinaigrette dressing.5. Greek Lemon Chicken Salad: Broiled lemon oregano chicken breast, feta cheese, diced tomatoes, cucumbers, artichoke hearts and kalamata olives in a Greek vinaigrette dressing. Regular and petite sizes available.6. Tender Lamb Shank: Braised with red wine, garlic and herbs. Served with mashed potatoes and pan vegetables.7. Seared Scallops & Asparagus Ravioli: Seared jumbo scallops and citrus garlic broiled fresh asparagus served atop mozzarella & asparagus ravioli and tossed in a light basil cream.8. Mahi-Mahi: Available pan griddled or blackened with cajun spices. Served with seasonal vegetables, choice of potato and one of two pan sauces: Asparagus Tomato Cream or Lemon Caper Butter.9.
