MIMIS CAFE OPENS IN WESTMINSTER, COLO., ON DEC. 6

New location marks eighth in the state

TUSTIN, Calif. – Westminster, Colo., residents will soon be able to enjoy comfort food classics at Mimis Cafe, an upscale family dining restaurant with eight locations in Colorado and 121 nationwide. Located at 14416 Delaware Street, the new restaurant will serve Mimis Cafe’s signature French Market Onion Soup, Chicken Pot Pie, Pasta Jambalaya and more. General Manager Mike Jones welcomed guests beginning Dec. 6 at 4:00 p.m. Breakfast, lunch and dinner will be served daily from 7:00 a.m. to 11:00 p.m.

The new restaurant will regularly feature seasonal specials. Through Feb. 20, Mimis Cafe plans to offer guests a unique twist on comfort foods. Spiced up specials that highlight Southwestern flavors will include Chicken Chorizo & Egg Enchiladas for breakfast, zesty Black Bean & Chicken Chorizo Dip for an appetizer and Carne Asada Entrée Salad for lunch or dinner, to name a few.

Mimis Cafe will offer seating for more than 200 guests within multiple rooms, each with a different feel. A full bar will include favorites like The ABSOLUT Magnificent Mary, Fresh Squeezed Margaritas and Mimitinis. Showcasing New Orleans café décor, the restaurant interior will showcase vibrant colors and jazzy art, while the unique exterior architecture resembles that of a colorful European cottage.

“Mimis Cafe will be an active and caring member of the Westminster community. To help support local schools, we’re reaching out to Arapahoe Ridge Elementary School and Cotton Creek Elementary School to supply 1,300 Certificates of Achievement that can be redeemed for a complimentary kid’s meal,” said Phil Coursin, local Mimis Cafe Market Partner. “We plan to continue more of these types of programs in the future.”
